HOW TO MAKE BAKED CHICKEN RICE WITH CHOURIÇO

Step 1: Place the chicken in a saucepan with water seasoned with salt and a small peeled onion. Boil over high heat. When starts boiling, reduce to medium-low heat and let cook for about 40 minutes. When it's cooked, drain the chicken with a skimmer and reserve the cooking water. Remove the skin and bones from the chicken and flake with a fork.

Step 2: In a saucepan, add the chopped onion, the chouriço cut into small pieces, the chopped garlic and the olive oil. Sauté over low heat for about 5 minutes. Add the flaked chicken and season with nutmeg. Stir and cook over low heat for about 7 to 8 minutes. Add the rice and season with a little salt. Stir, pour the cooking water (about 700 ml (3 cups)) and boil over medium-high heat. When starts boiling, reduce to low heat and let cook for 10 to 12 minutes.

Step 3: Meanwhile, preheat the oven to 180ºC (350ºF).

Step 5: Turn off the oven and serve.

    • 75 grams (2 2/3 ounces) Portuguese chouriço
    • 50 ml (1/4 cup) olive oil
    • Nutmeg (to taste)
    • 1 large onion
    • 3 cloves of garlic
    • 250 grams (1 1/4 cups) rice
    • 1 small onion to cook the chicken
    • 1 to 2 egg yolks
    • Water to cook the chicken
    • Salt (to taste)
