Best Blueberry Waffles Recipe (1)

Waffles or pancakes. It’s such an epic contrast of styles. Of course, I love blueberry pancakes! Who doesn’t? But it’s also so hard to resist the idea of blueberry waffles.

Why? Why do we like waffles so much? Because with waffles you get a crispier crust and those waffle pockets give opportunities for the sugar in the batter to caramelize. We don’t get that as much with pancakes.

Sometimes a waffle is exactly what you’re looking for. Imagine a nice, big stack of blueberry waffles topped with blueberry sauce. It’s perfect!

Key Ingredients

You can find the full printable recipe, including ingredient quantities, below. But first, here are some explanations of ingredients and steps to help you make this recipe perfect every time.

Here are the ingredients you’ll need for this recipe, including substitution ideas:

  • Flour — I use all-purpose flour, but you can substitute whole wheat pastry flour (different than whole wheat flour).
  • Plant-based milk — I use mostly soy milk. You can substitute any plant-based milk such as almond milk.
  • Ground flaxseed — Ground flaxseed is a great egg replacer, or you can use a chia egg instead.
  • Apple cider vinegar — It’s the combination of plant-based milk with vinegar that makes vegan buttermilk. And that is my favorite trick for fluffy waffles!

What Makes This Recipe Shine?

  • Both all-purpose and whole wheat flours are added to make these waffles delicious and healthy, too
  • Fresh or frozen blueberries are added to the waffle batter to create bursts of blueberries throughout
  • Melted vegan butter in the batter makes these waffles buttery and rich in every bite!

How to Make Vegan Blueberry Waffles

So, let’s talk about how to make this blueberry waffles recipe. It’s really quite simple.

  1. Stir together dry ingredients from the flour to the baking powder
  2. Mix together wet ingredients from the plant-based milk to the vanilla
  3. Stir the two together until combined

  4. Gently stir in the blueberries

  5. Heat the waffle iron
  6. Add the batter to a heated waffle iron and cook until golden brown

  7. Transfer cooked waffles to a pan in a heated oven to stay warm. Continue making waffles until the batter is gone.

Quick Fix Tip

Use frozen blueberries for these waffles to keep things simple. Besides, frozen blueberries work best because they don’t burst into the batter as easily.

This is a vegan waffle recipe, but you won’t miss the eggs, dairy, or butter. We’re using ground flax as an egg replacer, and it works great. Dairy-free waffles are just as good!

Marly’s Tips

Here are some great tips to help you make these homemade blueberry waffles perfect every time:

  • Because vegan butter comes salted, there’s no need for additional salt to be added to the batter.
  • The batter may thicken up as it sits, if so, feel free to add more plant-based milk or another tablespoon of melted vegan butter. Thinner batter will create crispier waffles.
  • I like to use a 1/2 cup measuring cup to dispense batter evenly into the waffle iron.
  • Use the back of a measuring cup or spoon to gently press the batter around, making sure every section of the waffle iron is filled.
  • I love the combination of all-purpose and whole wheat flour in this recipe, however, you can use only all-purpose flour or even whole wheat pastry flour if you prefer.
  • If you have a Belgium waffle maker, you can use this batter to make blueberry Belgium waffles.
  • Fruit waffles are delicious, so feel free to substitute your favorite berries, such as raspberries or even a mixture of berries.

I think you’ll agree these are the best blueberry vegan waffles! You can use the blueberry sauce from my vegan cheesecake recipe. Of course, maple syrup is always tasty over waffles or pancakes.

Notes

Nutritional estimates are for waffles only and does not include toppings.

Most waffle irons have an indicator light to show when the waffles are done. However, I like to cook them just a little bit longer, to make sure they get a crispy crust.

You don’t need to add additional sodium to these vegan waffles because vegan butter is usually salted. If you’re using unsalted butter, you can add up to 1/4 teaspoon.

Why are my homemade waffles not crispy? ›

Why are restaurant waffles so good? ›

While the griddles themselves likely vary from one diner chain to the next, diners are pretty much all working with a waffle iron or griddle that's already hot. IHOP, for instance, requires its pans to be heated to 350 degrees Fahrenheit, and uses Crisco instead of butter to grease it, says Grimm.

What kind of flour is best for waffles? ›

On the flip side, waffles aren't as flaky-delicate as baked goods, making pastry flour too fine for the job. Good old AP, or all-purpose, flour is where it's at. If you want to sprinkle in a tablespoon or two of buckwheat or rye flour for added nutty heft, go for it.

Should you let waffle batter rest? ›

Recommended overnight or 2 hr resting – for the tastiest waffles, rest the batter overnight in the fridge or for at least 2 hours. This makes the flour grains absorb the liquid so it makes the inside of the waffles softer.

What is the difference between a Belgian waffle and a regular waffle? ›

Belgian waffles are usually thicker than their American counterparts. These Belgian beauties are made with a recipe that includes yeasted batter and crunchy pearl sugar. Belgian waffles have extra-deep pockets—the better for filling with butter, jam, maple syrup, or whipped cream.

Why are my waffles not light and fluffy? ›

Making pancake and waffle batter ahead of time is a huge no-no and will lead to flat, dense results every time. Even letting your batter hang out for just a few minutes after you've mixed it before you start ladling it onto the griddle will lead to less fluffy results.
