But if you admit the fact that I don’t have any nuts, I would say that this breakfast treat has the same kind of vibe. And I am a Starbucks fanatic.

A banana loaf is perfect to make during the weekend for brunch with friends. And guess what? This dish is something you can make ahead of time and wrap tightly to preserve freshness. I’ve done it.

  • 1 cup white sugar

How To Make Banana Bread From Scratch

One thing I want to note is that this recipe calls for 4 bananas which sounds like a lot but that’s what makes this simple banana loaf so moist! And believe me, that’s what you are looking for as a hostess.

As basic banana bread recipes go, you really don’t need many staples – just bananas, nutmeg, cinnamon, and your foundation. Don’t shy away from the amount of fruit we are putting into to this mix. It will work out!

Preheat oven to 350 and grease a loaf pan with nonstick cooking spray. In a small bowl, add flour, baking soda, salt, cinnamon, and nutmeg and mix well. Set aside.

In a larger mixing bowl, add sugar, oil, eggs, and bananas and mix well. Add flour mixture to loaf pan and mix just until combined. Pour into prepared pan.

Bake for 45-55 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and cool the banana loaf completely.

If you have no idea how to mash bananas, I wanted to give you a little tip. There are some blogs that suggest whipping out a food processor or mixer and that sounds exhausting to me. I suppose you could do that, but then you have to clean everything!

Just use the back of your spoon or fork and push down on all of your bananas in a large bowl. A little at a time until you have a consistency you like. Go old school. It will work.

How To Keep Your Banana Bread Moist And Fresh?

Ok, here’s the real secret to moist banana bread – you have to really wrap it up tightly! Saran wrap will do. Plastic wrap will do wonders if you really secure your leftovers. I wouldn’t recommend Reynold’s Wrap in this case.

Can You Freeze Banana Bread?

Honestly, I don’t think you will have any leftovers – but I will play along. Yes, you can freeze banana bread. But you need to double wrap your leftovers if you do.

So, first you need to wrap it up tightly in plastic wrap and then you need to wrap it up in Reynold’s Wrap. Once you have your banana loaf SAFE, you can store it for up to two months.
